Ingredients
- 2 cups old-fashioned rolled oats
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 ripe bananas, mashed
- 1/4 cup honey or maple syrup
- 1/4 cup melted coconut oil or unsalted butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
- 1/2 cup shelled pistachios, roughly chopped
- 2 tablespoons chia seeds (optional)
- 2 tablespoons ground flaxseed (optional)
Instructions
1. Prepare the Oven
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Mix the Dry Ingredients
In a large bowl, whisk together the oats, whole wheat flour, baking powder, baking soda, cinnamon, salt, chia seeds, and flaxseed.
3. Mix the Wet Ingredients
In another bowl, combine the mashed bananas, honey, melted coconut oil, egg, and vanilla extract until smooth.
4. Make the Dough
Pour the wet ingredients into the dry ingredients and stir until combined. Gently fold in the blueberries and chopped pistachios.
5. Shape the Cookies
Scoop about 2 tablespoons of dough onto the prepared baking sheet and flatten slightly with the back of a spoon, as these cookies won't spread much.
6. Bake
Bake for 14 to 17 minutes, or until the edges are lightly golden and the centers are set.
7. Cool and Enjoy
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Expert Tips
Use very ripe bananas for the best natural sweetness. If using frozen blueberries, add them directly from the freezer to prevent excess moisture. Don't overmix the batter to keep the cookies soft and tender. Toast the pistachios beforehand for even deeper flavor.
Storage
Store the cookies in an airtight container at room temperature for up to 2 days or refrigerate for up to 1 week. Freeze individually wrapped cookies for up to 3 months and thaw overnight or microwave for 20 seconds before serving.
Serving Suggestions
Enjoy with Greek yogurt, cottage cheese, fresh fruit, smoothies, coffee, or tea. These cookies also make a nutritious lunchbox snack or post-workout breakfast.
Recipe Variations
Add white chocolate chips, shredded coconut, dried cranberries, chopped almonds, walnuts, pumpkin seeds, or hemp hearts for additional texture and nutrition. Swap blueberries for raspberries or chopped strawberries for a seasonal twist.
